What is vinegar?
Vinegar is made in two fermentations: yeast turns the sugar in fruit, grain or other raw materials into alcohol, then bacteria turn that alcohol into acetic acid. Spirit (white) vinegar, cider vinegar, malt vinegar and wine vinegar differ only in the starting material.
Why it's marked “Generally halal”
Once fermentation is complete, vinegar is acetic acid in water with little or no alcohol left, so it is widely regarded as halal. This includes wine vinegar for most scholars, because the wine has changed into a different substance. Some avoid vinegar made deliberately from wine, which is why wine vinegar is the case to check.
Where views differ
Most scholars consider vinegar halal whatever it was made from, because the alcohol has turned into acetic acid. Some hold that deliberately turning wine into vinegar is not permissible, even if the vinegar itself may be.
How to check the label
Spirit, cider, malt, rice and grape vinegar raise no question for most people. If you follow the stricter view on wine vinegar, check for “wine vinegar” or “balsamic” in dressings and sauces, or look for a halal certificate.
Where you'll find it
- salad dressings
- pickles
- ketchup and sauces
- mayonnaise
- crisps
Good to know
- Balsamic vinegar is made from cooked grape must and is often blended with wine vinegar.
- Distilled malt vinegar is made from barley and is not related to wine.
